LACONIKO

Do you ever have those moments when you're just feeling really sluggish & lacking energy? Or maybe you're looking for something really easy to add into your daily meal plan that is not only delicious but packed full of nutrients.  We have the solution for you!! This simple recipe is how we start off each morning. It won't take long before you're hooked on them just like we are.  The green color of this smoothie comes from raw spinach. Don't let this scare you...raw, uncooked spinach is completely tasteless, but it sure does make this smoothie absolutely beautiful looking. Let's get started. It'll only take you a few minutes to make and there are several variations to suit all your family member's tastebuds.

Recipe

Ingredients:

  • 1 large handful of uncooked, spinach;

  • 1 Tbsp ground flaxseeds (Whole flaxseeds will not blend well)

  • 1 Banana

  • 1 cup of other mixed frozen fruit (We used pineapple, mango, and peaches). You may use fresh as well, but frozen fruit not only makes your smoothie extra cold but it lasts longer too.

  • 1 Tbsp good quality honey

  • Liquid of choice, such as water or juice (We love this specific Coconut water because it's raw, unprocessed, and DELICIOUS)

  • 1-2 Tbsp of LACONIKO extra virgin olive oil

Directions: 1. Put your spinach, banana, frozen fruit, and Laconiko Olive Oil into a blender. We have a Nutribullet but you can make this smoothie with whatever blender you have!! No need to buy any special equipment. You don't need expensive machinery to be healthy.
 

2. Add in the flaxseeds, honey, and liquid.
 

3. Mix it on up until very smooth. We usually let this run in the blender for about 2-3 minutes just to make sure all the frozen fruit and the spinach is broken up.

 

4. The finished product!! Don't let the color intimidate you. One sip of this powerhouse and you'll be in love!!

 

We hope you try this smoothie soon!! What a better way to start each morning than by getting your fruit intake for the day, electrolytes from the coconut water, antioxidants from spinach and Laconiko Olive Oil, and also healthy OMEGA 3's from the flaxseeds and Laconiko Olive Oil.

Recipe

Ingredients:

  • 4 ripe (soft) avocados scooped out & diced

  • 1/2 a red onion, diced

  • 1 ripe red tomato, chopped

  • 1/2 jalapeno pepper, finely chopped (with seeds removed- the seeds are the hottest part)

  • Lemon juice

  • Salt & Pepper

  • Cumin

  • Laconiko extra-virgin olive oil

  • Sweet corn (optional)

Directions:1.  First, dice/chop all the solid ingredients and place in a large bowl.

2.  Add in approx 1 teaspoon of ground cumin, a heavy sprinkle of salt & pepper, a few teaspoons of fresh lemon juice, and a liberal amount of Laconiko olive oil. Start off with a few drizzles and add in more as you go along (It's easier to add more in than it is to thicken your guacamole).

​

3.  Using two forks, mash together all the ingredients until you reach desired consistency.

4.  Place bowl in the fridge and let it chill while you're making your homemade chips (recipe below)

Ingredients:

  • Ready made fresh pizza dough (usually in the refrigerator section at your local grocery store)

  • Laconiko Extra-Virgin Olive oil

Directions: 1. Roll out your dough onto a floured surface. It helps if you pre-flour your rolling pin as well.

 

2. Use a sharp knife to evenly cut thick strips in the dough. TIP: Lightly brushing your dough with a tiny bit of Laconiko olive oil prior to cutting will help cut evenly and smoothly.

3.  Brush the flip side of the strips with Laconiko's extra-virgin olive oil, place on a baking sheet covered in aluminum foil, and bake at 325 degrees for approx 20 minutes (or until lightly golden brown).

​

4. Once complete, place chilled guacamole into a bowl and surround with your delicious homemade crispy chips. These won't last more than a couple minutes because we guarantee you'll eat them all.

You read correctly...we said "kale" chips. Trust us, one taste of these and you will quickly be replacing those unhealthy potato chips for something so nutritious and tasty.  Make these anytime of day for a quick, healthy snack or as a side to a great sandwich. With almost no prep time, you could make these as soon as you're done reading this post!

Ingredients:

  • One bag of cleaned kale

  • LACONIKO's original extra-virgin olive oil

  • Salt & pepper

  • THAT'S IT! Can you believe how simple the ingredient list is?!

Directions: 1. Rinse and strain your bag of kale.

2. Once the kale is completely strained(dried), spread out evenly onto a cookie baking dish.

​

3. Sprinkle with a few heavy sprinkles of coarse sea salt followed by crushed black pepper.

4. Drizzle with a liberal amount of LACONIKO extra-virgin olive oil then use your clean hands to give the kale chips a nice little massage & toss to make sure each leaf has equal amounts of salt/pepper and olive oil.

 5. Ready to bake!! Place kale in a 400 degree oven for 20 minutes.

6. EATING TIME!! Enjoy your crispy, crunchy, healthy Laconiko treat!

Whether you're looking for a savory snack or a perfect compliment to your home-cooked meal, Laconiko's Garlic Bread is the perfect fit.  You can't go wrong when combining the buttery taste of Laconiko extra-virgin olive oil with the fresh taste in Laconiko's NEW garlic-infused olive oil.  Start making this bread about 15-20 minutes before your main course is complete. Here's what you'll need:

  • 1 large loaf of your favorite baguette

  • Laconiko extra virgin olive oil AND garlic-infused olive oil

  • Crumbled feta cheese

  • Shredded or freshly grated Parmesano

  • Dried oregano

Directions: 1. Cut the baguette long ways down the middle

2. Brush an even coating of Laconiko's garlic-infused olive oil across both halves of your baguette

 

3. On one half, sprinkle a liberal amount of feta cheese and a touch of dried oregano (or more if you prefer)

4. On the second half, sprinkle a nice layer of Parmesano cheese

​

5. Next, drizzle some of Laconiko's original extra-virgin olive oil across both sides of baguette

6. Place in a 375 degree oven for about 15-20 minutes, or until golden brown on the top.

7. Slice and enjoy with your favorite meal and glass of wine.

Directions: Nothing gets easier than Greek feta cheese, liberally drizzled with LACONIKO olive oil, topped with dry oregano, and a few LACONIKO hand-picked Kalamata olives on the side...

 

Last night we decided to use this as a crumbled addition in our spaghetti and meatballs! What a great way to add flavor to your favorite pasta dish, or even served on top of toasted pita bread. Give it a try!

CRUSHED RED PEPPER DIP

Ingredients:

Salt, Oregano, Crushed red pepper flakes, LACONIKO olive oil, and bread of your choice

Directions: Place a sprinkle of salt & a pinch of red pepper flakes and oregano into a bowl with plenty of LACONIKO olive oil (alter to your preference).

LEMON-OREGANO DIP

Ingredients:

Salt, Oregano, Freshly-squeezed Lemon juice, LACONIKO olive oil, bread of choice.

Directions: A sprinkle of salt & oregano with a good squeeze of lemon juice combined with LACONIKO olive oil is sure to make this one of your favorites!!

Ok, so they aren't really GREEN eggs...and I used prosciutto instead of Ham, but this alternative to the traditional Deviled Egg is so amazingly easy & delicious!!

  

As an avid egg lover myself, this is such a nice twist to an original recipe.  We served them as appetizers on Easter Day and they were such a hit with our guests.

  

I learned this lesson the hard way: DO NOT make these in advance. The avocado filling will end up turning brown. YUCK!! Make them a couple hours before eating. Ready? Here we go...

Recipe

Ingredients:

  • 6 hard-boiled eggs

  • 1/2 avocado

  • 1/4 cup Laconiko Olive Oil

  • 1 heaping Tbsp mayonnaise

  • 2 tsp Dijon mustard

  • 1 and 1/2 tsp cider vinegar

  • 1/2 cup chopped herbs, such as fresh parsley or basil

  • 1/2 tsp chopped garlic ( or 1 clove minced)

  • Salt & Pepper, to your taste

  • 3 slices Prosciutto

Directions: 1. Boil 6 eggs over medium-high heat for about 10 minutes;

​

2. Drain and place eggs in ice cold water for another 5-10 minutes. Then remove and peel completely. Placing the eggs in cold water helps you to remove the shells easily.

​

3. Cut eggs in half length-wise and remove yolks from white. Set whites aside;

​

4. Place the egg yolks, 1/2 avocado, Laconiko Olive Oil, mayo, mustard, vinegar, chopped herbs, garlic, and a sprinkle of salt & pepper into a food processor. Do not OVER salt. Puree until you get a beautiful light green smooth mixture;

​

5. Place avocado/yolk mixture into a Ziploc plastic bag. Snip off the corner of the bottom to create a pea-sized hole. This makes piping the mixture into the egg whites so much cleaner & it makes it look pretty too. Fill each egg white FULL.

​

6. In a saute' pan, crisp up the pancetta until it's nice and crunchy.

​

7. Crumble the crispy prosciutto over each deviled egg as a final touch.

 

The most important step...EAT!!! You will be surprised how many of these you can eat in one sitting.

Directions: 1. Slice up your favorite loaf of bread & drizzle with Laconiko olive oil.

​

2. Bake the bread for 5 minutes in a 375 degree oven.

​

3. In the meantime, dice up your favorite tomatoes. You'll also need some good 1/2 cup feta cheese & 1/2 of a red onion (chopped) for this bruschetta.Crumble the feta & combine with the tomatoes in a bowl. Add in a liberal amount of Laconiko olive oil, salt, pepper, and a few sprinkles of oregano.

​

4. Remove sliced bread from the oven & heavily top each one with the tomato/feta mixture. You can pile these as high as you'd like but REMEMBER that you & your dinner guests have to fit it in your mouths.

​

5. Put back into the 375 oven for another 4-5 minutes.

FINAL STEP: Pour yourselves a glass of wine, sit back, and enjoy your easy yet elegant Laconiko Bruschetta!!
